This morning, they celebrated the birthday of my neighboring office. I was obviously proposed to make the muffins! Unlike my usual, I arrived early to avoid missing the start. The worst, is that I almost miss the surprise it seemed so incongruous that I arrive early at the office! I wish to celebrate a happy birthday to Charlotte who helped break the myth of my lateness… ;-)
The muffins have, I believe, been much appreciated. I've been using this perfect recipe for years, by Pascale Weeks as a base for sweet muffins. I made a version of white chocolate-raspberry version in chocolate chip pudding Gold Coast (my guilty pleasure). I always do my chips myself with my favorite chocolate. Simply remove the chocolate from the refrigerator and chilled to break into nuggets with the tip of a knife vertically, it breaks alone.
Chocolate chip muffins with berries
Serves 8 gros muffins ou 14 means
- 280g plain flour
– 2 eggs
– 100g butter
– 100g powdered sugar
– 1 tbsp vanilla sugar
– 1/2 teaspoon baking powder
– 1/2 teaspoon baking soda (optional)
– 1 pinch of salt
– 10 0ml milk
– 1 plain yogurt
– garnish: 150g chocolate chips or 150g of red fruits 75 chocolat/100g of red fruit…
Pre-heat the oven to 180°C/Gas 4. Mix in a bowl: flour, baking powder, sugar, vanilla sugar and a pinch of salt (and baking soda if you put).
In another bowl, Beat the eggs with a whisk and pour the melted butter, stirring constantly. Add milk and yogurt.
Stir this mixture to the flour-sugar-baking powder one and mix well. Finally add desired topping and mix gently.
Fill muffin cups to 3/4 because it swells much! Bake the muffins 20 minutes. Them out and wait 5 minutes before unmolding.
