When not too many ideas for dinner but, otherwise, hunger we squeezed, was sometimes unsuspected powers of improvisation. I wanted chicken basil but few other ingredients basil (I still had it…). I suddenly concocted a chicken with basil and tomato with a jar of tomato that was lying, It was unpretentious but actually quite good with a small simple white rice!
Chicken with basil and tomato
Serves 4 people
- 400g chicken breast
- 30cl tomato
- 1 shallot
- 1 bunch of basil
- 2 tablespoons olive oil
- salt, pepper
Cut chicken into pieces and chop the shallots. Saute chicken and onion in skillet over high heat in 2 tablespoons of olive oil until chicken pieces are well browned.
Reduce heat and add the tomato paste and half the chopped basil. Simmer a few minutes.
Off the heat, add the remaining basil, salt, pepper and serve with rice.
