The 2 February, Candlemas is and I can not help but give you my recipe for pancake batter. I love neutral, without sugar and rum to taste the sweet and savory crepes. I put a lot of beer to ease the dough but also because I love this particular taste in crepes.
Crepe batter
Prep: 10mins
Resting time: 1hr
Cooking: 2minutes per pancake
For a couple of crepes
- 250g plain flour
- 3 eggs
- 500ml milk
- 10cl beer
- 1 teaspoon oil
- 1 pinch of salt
In a bowl, form a well in flour and add the beaten eggs before. Mix vigorously with a whisk.
Mix in the milk very slowly while beating. Then add salt, beer and oil.
Cover the bowl with a cloth and let stand at least an hour.
Heat a skillet. Grease with a little oil. When the pan is hot, pour a ladle of pancake batter and cook 1 to 2 minutes per side.
Taste to taste with ham, cheese, salmon or jam, Nutella, sugar & lemon (my favorite flavor),…
