Leek soup, potatoes
Serves 4 people
- 600g leeks whole
– 500g potato
– 1 vegetable stock
– 15g salted butter
– nutmeg, pepper
– liquid thick cream to taste
Rinse leeks thoroughly and cut into rings (well to the green and white). Peel the potatoes and cut into coarse pieces.
Melt 15g of salted butter in a pan and saute the leeks and potatoes over high heat for 5 minutes.
Cover with hot water (about 1 liter) and add a bouillon cube. Bring to a boil, cover and cook about 25 minutes.
Mix until you get a velvety texture. Add a little water or milk if the soup is too thick. Add a little nutmeg and cream to taste. Add salt, pepper. Serve hot with croutons.
