An ultra-fresh salad, ultra-light, ultra-simple, ultra-fast, ultra-right??? I found my hit of the season with fennel and salmon salad by Med's Grandmother. A simple salad, compound 3 ingredient, crisp and refreshing that I could call whenever I want to diet or just when I would look for a quick entry to serve before a hearty dish.
Fennel-Salmon Salad
Prep: 5mins
Serves 2 people
- 1 fennel bulb
- 1 large slice of smoked salmon (or 2 small)
- juice of 1 / 2 lemon
- salt, pepper
Rinse the fennel, cut and discard the start of the branches and the base of the bulb. Cut the bulb 2 in length.
Place each side of the bulb on a board and cut into very thin slices from the bottom as if you were chopping cabbage.
Cut the smoked salmon into small pieces.
In a bowl, Mix the fennel and smoked salmon. Sprinkle with lemon juice, toss gently. Add salt, pepper.
Serve chilled!
