In roommate Martin, there 5 guys and a great kitchen that is used primarily to cook pizza, Martin except when the kitchens to prepare rice Tita. One of his roommates told me about this famous chicken with trembling voice, he was so well chosen the cooking lesson he could give me every step of the recipe without error. But there was evening and it was late; brief, I have not chosen the recipe (which is rather rare). So I sent a little message to Martin that he gives me the recipe because I was really too curious to taste. This recipe is named Rice “Tita” in reference to the Philippine nanny Martin who was preparing this dish miracle when he was sick. If in addition to being delicious, This dish has healing powers, I still had more to taste. Martin has very kindly answered me and wrote me and sent her recipe. I just said his recipe but his writing style was so irresistible and delicious that I could not help to restore his comments in brackets. And the result then? It was an absolute delight and I must say somewhat comforting… I did express a little more rice to have lunch next MiniCook but loved it so much he has done everything…
This recipe uses garlic and ginger was ideal for testing the Garlic Twist sent by Paris Culinary, super site selling kitchen accessories always at the forefront of innovations. I do not have a garlic press and I deplore it often especially for ginger that I use very often. Is, I was met by the Garlic Twist which is very easy to use and clean but what is especially notable that press and cut ginger (or garlic) together. Thus recovered the juice and pulp chopped well which avoids the large piece just crushed a classic garlic press. Riz Tita Martin (chicken rice and spices)
Serves 4 people
- chicken meat for 4 people (if possible the thighs, of “pink chicken” not too much white, because it can be dry)
- 1 bunch of spring onions
- 5 cm of fresh ginger
- 2 garlic cloves
- 4 tablespoons olive oil
- 1 teaspoon of turmeric (if you like turmeric, put in more than a teaspoon, moi j'adore ça j'en Mets 2 well teaspoons packed)
- 1/2 vegetable stock (if you want, but it is not absolutely necessary)
- fresh coriander
- 300g de riz à risotto (rather like Carnaroli)
- limes (takes into good)
Rinse and chop the onions. Peel and slice the ginger and garlic into small pieces or use Garlic Twist.
In a wok or Dutch oven, warm 4 tablespoons olive oil. Saute onions 2-3min then add garlic and ginger and sauté 3 minutes more (careful not to burn garlic, but I do not thee I guess you )
Add the chicken thighs whole (for chicken I like to put the bones, it can give body to the sauce, and taste) and lightly brown (only minutes).
Then add the risotto rice and fry this mixture (this “crazy little mix”) until it becomes transparent. Sprinkle turmeric and cover with boiling water (75cl for at least 300g rice) and possibly adding a 1/2 vegetable stock.
Simmer for about 30 minutes, the time cook rice (but not too long! because it requires that the dish is a little liquid, this is what makes its charm). If the rice has absorbed too quickly, do not hesitate to add one or 2 ladles of boiling water until cooked.
The final touch (which is a must, and what makes the diff in this dish) : Cilantro torn pieces on top of the dish and press (“squeezer”) over half a lime (–> my big kiffe : coriander best grass in the world, lime it gives you just the hint of acidity).
* Turmeric: this is a great natural anti inflammatory, widely used in Chinese medicine and in particular it purifies you from the inside it is a joy – Philippines my nanny of rice when we did this was sick.
The Base Asiat’ : the following; thou mayest be used for any database Asian recipe, but you must know:
– New onion
– Ginger (fresh if possible)
Do not hesitate to put the dose, because it is really this basis will give a taste southeast asia crazy ! With this basis asiat, you can do lots of wonders; ex : a radical of beef, you cut your beef into thin strips, and some carrots (also sliced), or peppers, you added to the base asiate, you do return all, you deglazed with soy sauce , a little rice and better bingo remains of your life !
