Episode incongruous when I was racing my rue Daguerre in late June, I made a funny address maniac who offered me to cook with him on his scooter. Okay I admit I was initially a little suspicious mode “Who is this guy who accosted me in the street while I shop” ;-) but it looked nice and basically I did not risk anything to go, I followed up his bike food. And I discovered chief Abdel Alaoui / actor of genius. After quickly inspected my bag, he took out enough to make a dessert with amazing hibiscus flowers (sometimes called roselle or carcadet by country) that I intended to roselle juice Fisheries and fruit salad for my dinner and the concocted in two-three movements of a swimming flat peaches at the Hibiscus. Abdel told me well we do not say “Poached” because it would mean that fisheries have cooked in syrup but “swim” because the syrup is cold when poured.

A recipe as I love them, super simple and super fast but thoroughly surprised. I so loved this dessert that I've redone 3 times since, each time with great success. I just adapted to my sauce by preparing it with nectarines and adding a little fresh mint. Abdel thank you for this delicious dessert and this time greedy unexpected!!!

The term “swim” often called a light broth in which cooked fish or shellfish that is served and then with; but it can also refer to a very liquid sauce or light syrup in which the main component is (eg dessert: a swim or swim citrus to peach hibiscus). Swimming is often a cold liquid that can be used to cook the component but no longer has this function when it is served.

Serves 6 people

- 6 flat peaches or 6 nectarines
- 1 handful of dried hibiscus flowers
- 1the water
- 200g brown sugar
- 1 piece of fresh ginger (about 4cm)
- 1 lemon
- qq fresh mint leaves

In a saucepan, boil water and sugar, to obtain a syrup. Add the juice of one lemon, ginger coarsely chopped (no need to peel) and hibiscus flowers. Steep for 2 minutes over low heat.

Filter all with a chinois or a fine strainer to retrieve only the hibiscus syrup. Let cool 10 minutes.

Meanwhile, Flush flat peaches or nectarines and cut into thin slices or cubes. Have the equivalent of a peach or nectarine in individual cups.
