Goat cheese and spinach cauliflower crust pizza

Serves 2 to 3
Ingredients
Cauliflower crust
  • 1 small head of cauliflower*
  • 1 plain yogurt
  • 1 egg
  • 1 tablespoon mustard
  • salt, pepper, dried oregano
Garnish
  • 250g fresh spinach
  • ½ pack of fresh goat cheese
  • 1 handful grated mozzarella
  • olive oil
Instructions
Prepare the cauliflower crust
  1. Prepare the cauliflower crust following the steps of my gluten free cauliflower pizza.
Prepare the filling
  1. Cook the spinach in a large skillet over low heat, stirring occasionally, until wilted.
  2. Place cooked spinach on the cauliflower crust. Arrange on top pieces of goat cheese. Sprinkle with grated mozzarella and possibly an olive oil if you are for something a little more indulgent.
  3. Bake in the middle the oven for an additional 15 minutes.
  4. Serve immediately with a green salad.
Notes
* Make sure to use a very fresh cauliflower and blend it just before use. Otherwise it will start to ferment which could lead to a strong cauliflower taste!
